I usually just delete everything in the folder that contains minecraft.jar. It reinstalls Minecraft from scratch. The saves are in a different folder and I never touch them unless it's a world I don't like and has pretty awful builds in
i don't make mod mistakes. But when i do since you just edit the minecraft.jar most times i just delete that, start minecraft again so it redownloads. Get 7zip you'll need it and it's a nice program. Some mods are incompatible with each other. Keep all of your current version mods in a folder so incase you need to reinstall all of them you don't have to go looking around.

If your scared that you will mess up your Minecraft, get Magic Launcher. If you want to join a server with mods that you don't feel like installing, download Spoutcraft. Spoutcraft is a Minecraft client that allows you to join a server with mods and the client temporarily installs the mods when you join the server and when you leave, it gets rid of them. Very useful.
